QUICK MICROWAVED SHIRED EGGS
Here’s another quick recipe. Can be eaten as a light meal like lunch, or as a more
substantial midnight snack. Since this recipe is rather light, it will not weigh
too heavily in your stomach. Great quick energy snack too. The most unique feature
of this recipe, however, is that it bears the unique character of imparting a
shrimp-tasting flavor during cooking. I find this flavor to be very delightful and
satisfying. Enjoy this dish scooped between two slices of bread with mayo, or eat
right out of the bowl with a dash of Tobasco or sprinkled with grated parmesan cheese
and a tiny sprinkle of paprika.
Small microwaveable sauce bowl (this is a must)
Pat of butter
Garlic powder, salt (Lawry’s Seasoned Salt is BEST for this recipe) and pepper
Microwave oven (this is a must)
Using a small microwaveable sauce bowl (these are indispensable in a lot of my cooking),
put in a “small” pat of butter (preferable to margarine for this recipe). Crack in 2
fresh eggs over the butter leaving the yolks intact. Sprinkle with a little bit of
garlic powder or onion powder and a tiny sprinkle of paprika. Sprinkle with a little
salt and pepper too. Poke the whole yolks once each with a toothpick. Cover with plastic
wrap and smooth the plastic wrap over the sides sealing the bowl somewhat. Microwave
for about 3 minutes. Some microwaves take more time and some take less time. You can
also use 3 eggs instead of 2 but then you need to increase the microwave time.
EXPERIMENT. Once you have adjusted the microwave time properly, you can readily have
this delicious snack anytime.
After removing from the microwave, let sit for at least 1 minute to finish cooking and
to cool off a little. YOU MUST BE VERY CAREFUL WHEN REMOVING THE PLASTIC WRAP! EXTREMELY
HOT STEAM IN THE BOWL WILL BURN YOU. USE A LONG KNIFE TO PUNCTURE AND LET THE STEAM
ESCAPE OR JUST LET COOL DOWN.
You can scoop it out and eat in a sandwich with mayo or just eat it right out of the bowl
with grated parmesan cheese sprinkled on top. Personally I enjoy mine with a few drops of
Tabasco and then I scoop a little at a time on to a corner of bread and nibble. Can you
