HEAVENLY STEAMED CLAMS, LOBSTER, or any SHELLFISH



One of God’s greatest gifts, in my opinion, was that He made steam and shellfish
go together.  What a match!  Steamed shellfish is truly my favorite dish.  And guess
what?  It is one of the easiest things to cook!  You almost can not ruin it and any
one can do it.  I used to say, “shellfish is my excuse to eat butter.” If you like
food from the sea, treat yourself often to this simple recipe.  It proves that the
simple things in life are the best.

Any shellfish you desire 
1 stick of butter
Garlic powder, ACCENT food flavor enhancer, 1 teaspoon of lemon juice

If you buy clams get a brush and scrub them one by one.  I find that supermarket clams
are cleaner and are rested (clams spit out any sand after awhile) so that they contain
less sand than seafood store clams. Any clams that don’t close after/while you brush
them throw away.  These can be dead and make you very sick.    

Get a BIG 12-qt. pot with a lid.  Also (this is not absolutely necessary but is definitely
preferred) but get some kind of a rack to put in the pot to raise the shellfish anywhere
above the one inch of boiling water.  

Fill the pot with about 1-inch of water.  Put the rack in the pot (once I used a metal
upside down pasta strainer).  It is best to keep the shellfish out of contact with the
water or they might get too soggy.    

Bring the water in the pot to a medium boil.  Then put all your rinsed shellfish in the
pot on the rack.  Kinda place them around evenly.  Put the lid on.  Your shellfish will
be done in 20 minutes if your water is boiling (no more).  Clams are done as soon as their
shells open (check every 8 minutes after the first 20 minutes has elapsed).  Your shellfish
is done.  

Quickly microwave in a small microwaveable sauce dish a stick of butter, a generous amount
of garlic powder and some ACCENT’ food flavor enhancer for 1 minute or until all the butter
has melted.  Then add a dash of lemon juice.  Stir.

Dig out the meat from your shellfish which ever way is appropriate for you, and dip its
succulent flesh in to the butter sauce.  Eat and enjoy!  Pure heaven.
